Zuppa Toscana

Tuscan Soup is a rich, creamy, and tasty soup made with Italian sausage, potatoes, and kale. As one of my favorite soups, I am happy to share its recipe. I used to go to a restaurant to taste this scrumptious soup, but then I learned to make it myself. Soon, my homemade soup was even more delectable than the restaurant's version.

Ingredients

  • 1/2 lb. Italian Sausage, hot or mild
  • 1 lb. red potatoes
  • 1 yellow onion
  • 2 cloves garlic
  • 1 15 oz. beans
  • 1/2 tsp smoked paprika
  • 3 cups chicken broth
  • 1 cup water
  • 2 cups half and half
  • 1/2 lb. kale, chopped
  • 1 pinch red pepper flakes, optional
  • freshly cracked black pepper, optional

  1. Step 1

    Put sausage in a big pot and cook over medium heat. Break it up into small pieces as it cooks. If it sticks, add a bit of olive oil. It’s fine if a little browns on the bottom.

  2. Step 2

    While the sausage cooks, dice the onion and mince the garlic. Add the onion and garlic to the pot and cook until the onions get soft. The onions will dissolve any browned sausage from the pot.

  3. Step 3

    Drain and rinse the bean can. Put beans, smoked paprika, chicken broth, one cup of water, and half and half in the pot. Cover the pot with a lid and simmer over medium heat.

  4. Step 4

    While simmering, quarter the potatoes lengthwise and thinly slice them. Add potatoes with pre-chopped kale to the pot. The kale will fill the pot when it is first added, but the heat from the liquid will wilt it within a few minutes. Stir occasionally to help the wilting process.

  5. Step 5

    Let the pot simmer over medium heat for around 15 minutes, or until the potatoes become tender. Add red pepper flakes and freshly cracked black pepper to season, if desired.
