Vegan Creamy Mushroom Ramen

This easy Vegan Creamy Mushroom Ramen is a delicious and flavorful meal that takes only 20 minutes to prepare with a few basic ingredients!


  • 1 package ramen noodles (discard seasoning)
  • 4 oz. baby bella mushrooms
  • 1/2 tbsp cooking oil
  • 1.5 cups vegetable broth
  • 1 handful fresh spinach
  • 1/2 cup coconut milk (canned)
  • Optional Garnishes
  • 1 green onion, sliced)
  • 1 tbsp chili garlic sauce or sriracha
  • cheese to taste

  1. Step 1

    Cook sliced mushrooms with oil in a small pot over medium heat until they are soft, dark, and all the moisture in the pot has evaporated.

  2. Step 2

    Add vegetable broth, bring it to a boil over medium-high heat, add ramen noodles (without seasoning packet) to the boiling broth, and cook them for about 3 minutes or until tender.

  3. Step 3

    Turn off the heat. Add a lot of fresh spinach and stir until it wilts (around 30 seconds). Pour in the coconut milk and stir well.

  4. Step 4

    You can enjoy the Vegan Creamy Coconut Ramen as it is or with some green onion or chili garlic sauce on top.
