This soup is simple to prepare and it's loaded with healthy vegetables. The smoked sausage provides excellent taste and makes the soup more filling. Pair it with warm, crusty whole-wheat bread for a perfect winter dinner.

Heat 1 tablespoon olive oil in a big pot over medium-high heat.
Put in the sausage and let it brown for approximately two minutes. After that, flip and cook for two more minutes. Place the sausage on a plate while keeping the remaining oil in the pan (approximately 1 tablespoon).
Add another tablespoon of olive oil and put in the onions, carrots, and celery. Sauté for three minutes.
Saute diced bell pepper and minced garlic for an additional 2 minutes.
Then, add broth, tomatoes, potatoes, Italian seasoning, salt, and pepper to the mixture.
Stir in sliced sausage. Bring everything to a boil, then reduce the heat to medium-low.
Cover and simmer for 15 minutes, stirring occasionally. Add the zucchini and cook for an extra 10 minutes or until the vegetables are soft.
Add in the spinach and parsley and let it warm up. Serve it warm with parmesan cheese if you like.
