Place the cream cheese, lemon zest, lemon juice, dill and salt in the bowl of a food processor. Process until smooth, then taste and adjust the seasoning as necessary.
Roll up each piece of smoked salmon, overlapping it as you go.
Place one heaping teaspoon of the cream cheese on each cucumber slice. Top each with a piece of smoked salmon and a small sprig of dill. Serve and enjoy!
I chose to place a dollop of cream cheese on the cucumber with the smoked salmon on top, but you can also place the smoked salmon directly on the cucumber slice and pipe the cream cheese over it for a more decorative touch! Smoked salmon bites can be made up to a day ahead and stored in an airtight container until ready to serve. Customize the cream cheese by adding garlic, capers, or your favorite herbs.
