Spray a big nonstick pan with cooking spray and put it over medium-high heat. Cut the sausages into ½-inch pieces. Include the sausage pieces and sweet potatoes, cook for 8-10 minutes until sausages are thoroughly cooked.

Add apples, cranberries, almonds, and salt, stir, and cook for an additional 4-6 minutes, or until the potatoes are tender. Remove from heat and sprinkle scallions on top.

Grease the pan with cooking spray and heat over medium heat. Crack one egg into the pan at a time and reduce the heat to low. Cook for approximately 2 minutes, then flip the egg over to cook the other side once the egg whites have set. Divide the hash among four plates, place one egg on each plate, and serve.
