Spray the mushrooms with cooking spray and put them in a pan that is 15 inches long, 10 inches wide, and 1 inch high, with the stem side facing up. Add garlic salt and pepper, then bake without covering for around 10 minutes until the mushrooms have become soft.

At the same time, heat oil in a frying pan over medium-high heat. Put in the onions and cook until they have become soft. Cook the spinach by stirring it until it wilts.

Beat the eggs and salt together. Then add them to the pan and cook, stirring, until the eggs thicken and there is no liquid left. Spoon the mixture into the baked mushrooms. Optionally, sprinkle with cheese and basil. Lastly, serve immediately.
