Pizza Roll Ups with Pepperoni and Mozzarella Cheese

Forget frozen pizza rolls! These Pizza Roll Ups with Pepperoni and Mozzarella Cheese are the ideal quick appetizer or indulgent snack on busy days.

Ingredients

  • 8 small flour tortillas
  • 40 slices pepperoni
  • 4 mozzarella cheese sticks
  • oil, as needed
  • 1/2 cup pizza sauce

  1. Step 1

    Preheat the oven to 400 degrees F (200 degrees C). Put light oil spray on the baking sheet or thinly coat it with your preferred cooking oil.

  2. Step 2

    Place four tortillas at a time on a plate and cover them with a damp paper towel. Microwave for 20-30 seconds until they are steamy and soft. Repeat the process for the second batch.

  3. Step 3

    Cut each mozzarella stick lengthwise in half. Put 5 pieces of pepperoni on every tortilla, in the bottom third of the circle. Add a halved mozzarella stick on top. Then, fold the sides of the tortilla in to cover the ends and roll them tightly like a burrito.

  4. Step 4

    Place the tightly-rolled Pizza Roll Ups on the baking sheet, with the seam side down. Leave a little space between each roll to let hot air surround them. You can either spray the top with oil or brush a thin layer of oil on top of the roll ups.

  5. Step 5

    Bake the Pizza Roll Ups in the oven for 12-15 minutes until lightly browned and the cheese is starting to melt. Since ovens vary, check on the Pizza Roll Ups after about 10 minutes and then every two minutes until they are done.

  6. Step 6

    Serve hot with pizza sauce for dipping.

The tortillas I used were about 6 inches. I suggest purchasing tortillas that are a bit wider than the length of your mozzarella sticks so that you can fold the ends and keep the melted cheese inside.
