Preheat the oven to 350 degrees F (180 degrees C). Place the cauliflower florets on a baking sheet and sprinkle with ¼ cup of olive oil. Bake for 20 minutes, until goldenbrown. Remove and allow to cool completely.

In a large bowl, combine the tahini, the remaining ¼ cup of olive oil, lemon juice, lemon zest, maple syrup, kosher salt and paprika. Add the baked cauliflower florets, peppers and tomatoes. Toss to coat.

Divide the mixture among the lettuce leaves, using about ½ cup in each leaf. Garnish with the walnuts and parsley. Serve immediately.
