Instant Pot Lasagna Soup

If you're a fan of lasagna, then you're sure to enjoy this Instant Pot Lasagna Soup. It's the ideal comfort food for chilly winter days, plus it's a breeze to prepare! All you need are a handful of basic ingredients and your Instant Pot.


  • 1 pound ground beef
  • 1 tablespoon olive oil
  • ½ yellow onion diced
  • 2 tablespoon minced garlic
  • 4 cups beef broth (use more if you'd like a thinner soup)
  • 14.5 ounce can petite diced tomatoes
  • 14.5 ounce can crushed tomatoes
  • 2 ½ tablespoons tomato paste
  • 2 tablespoon Italian seasoning
  • salt and black pepper to taste
  • 8 lasagna noodles broken into 1” pieces (6.5 oz)
  • 1 ¼ cups shredded mozzarella cheese
  • ½ cup finely shredded parmesan cheese
  • 8 ounces ricotta cheese
  • 2 tablespoon chopped fresh basil for garnish

  1. Step 1

    Set the Instant Pot to the saute setting and add the oil. When it is hot, put in the onion and ground beef. Cook the mixture by breaking it up using a spoon until it is no longer pink. If there is a lot of fat, remove it. After that, use a wooden spoon with a flat bottom to scrape any bits from the pot's bottom. This will prevent the burn message you may get.

  2. Step 2

    Add the broth, tomatoes, seasoning, and noodles. Close the lid and seal the pressure valve.

  3. Step 3

    Cook on high pressure for 8 minutes. Quickly release the pressure and remove the lid.

  4. Step 4

    While the soup cooks, combine the mozzarella, parmesan, and ricotta cheeses. Refrigerate until ready to serve.

  5. Step 5

    Serve the soup in bowls and garnish with the cheese mixture and fresh basil, if desired.

You'll need to allow 8-10 minutes for the Instant Pot to come to pressure before the cooking time begins.
