Set the Instant Pot to the saute setting and add the oil. When it is hot, put in the onion and ground beef. Cook the mixture by breaking it up using a spoon until it is no longer pink. If there is a lot of fat, remove it. After that, use a wooden spoon with a flat bottom to scrape any bits from the pot's bottom. This will prevent the burn message you may get.
Add the broth, tomatoes, seasoning, and noodles. Close the lid and seal the pressure valve.
Cook on high pressure for 8 minutes. Quickly release the pressure and remove the lid.
While the soup cooks, combine the mozzarella, parmesan, and ricotta cheeses. Refrigerate until ready to serve.
