Recipe instructions Homemade Tagalong Cookie Bars

1

To prepare, preheat the oven to 350 degrees F (180 degrees C). Line an 8x8 or 9x9 square baking pan with aluminum foil, leaving an overhang. Then, spray the pan with cooking spray and set it aside.

2

For the shortbread crust, combine all ingredients in a medium mixing bowl. Cut in the butter with a pastry cutter or wooden spoon until a crumbly mixture forms.

3

Transfer the dough to the prepared pan and press it into the pan using your fingertips. Randomly pierce the dough with a fork about a dozen times so steam can escape while it bakes.

4

Bake for 12 to 15 minutes until the crust is barely set and not golden. The crust should still be white but crusted over. While the crust is baking, prepare the filling.

5

Combine all four ingredients in a medium bowl and stir until smooth to make the peanut butter filling.

6

Spread the filling over the warm crust. The thick filling will be easier to spread over a warm crust. Take care not to rip the crust while spreading the peanut butter filling.

7

To make the chocolate layer, melt the chocolate and shortening in a microwave-safe bowl. Heat the mixture at 30-second intervals, stirring each time until it is smooth.

8

Pour the chocolate over the peanut butter layer.

9

Cover the pan with aluminum foil and refrigerate for at least 3 hours or overnight. Once the bars have set, lift them out of the pan using the foil overhang. If desired, sprinkle lightly with sea salt before slicing and serving.

10

If the bars are very cold, let them come to room temperature for a few minutes before slicing.

11

We recommend storing the bars in the refrigerator, where they can last for at least 10 days (if they last that long), or in the freezer for up to 3 months.

You can even use shrimp butter as a filling for eggs, a sauce or soup addition, or a garnish for cold dishes. When refrigerated, shrimp butter can last up to one week or up to one month if frozen. Although the ingredients and preparation of the cucumber and red onion salad are minimal and simple, the dish has a unique flavor. Unlike regular onions, red onions are pickled and have a milder taste. Don't worry about using a lot of onions since the salad won't have an aggressive flavor but will be slightly spicy instead. The dressing for this salad is made with sour cream, which brings together the ingredients and adds creamy sourness.

This whole-grain Garlic Basil Sausage Farrotto is one of my favorite dishes. Farrotto is similar to risotto, but swaps out the traditional rice for farro. The addition of sausage makes this a meal that’s filling enough to serve for both lunch and dinner. Each bite is creamy but also has that slight bite of crunch, with the bright flavors of fresh garlic, basil and lemon juice complementing the nutty farro. If you’ve never used farro, there’s no better time to start—this nutritious grain is way healthier than white rice and, in my opinion, it tastes a lot better, too.
