Mix the marinade in a big bowl and add beef. Stir until the marinade is fully coated on the beef. Cover the bowl and refrigerate for at least three hours.
Preheat your outdoor grill on high. If you're using wooden skewers, soak them in water while you wait. If you're using metal skewers, skip this step.
Thread the chicken pieces onto the skewers. We used wooden skewers, 8 inches long.
Grill the beef to your desired level of doneness. Allow it to rest before taking it off the skewers and plating it.
Use fresh herbs as a garnish and serve with rice, tzatziki sauce, pita bread, and red onions.
