Place three wide and deep containers one behind the other. Fill the first bowl with flour. In the second bowl, mix the eggs and water using a fork. Put breadcrumbs in the third bowl.
For the breadcrumb mixture, combine the Italian breadcrumbs with the grated parmesan, salt, garlic powder, and onion powder.
Dredge each string cheese stick in flour, fully coating it on all sides.
Dip each stick in the egg mixture, letting the excess drip off.
Then, roll each stick in the breadcrumb mixture, fully coating it on all sides.
Dip each stick again in the egg mixture, and then roll again the breadcrumbs.
Transfer the sticks to a lined baking sheet.
Freeze the sticks for 20-30 minutes.
Heat the oil in a large Dutch oven until it reaches 325 degrees F (165 degrees C).
Drop 4-5 breaded sticks into the oil and fry for about 20 seconds until the breading is crispy and golden brown.
Transfer the mozzarella sticks to a plate or sheet pan lined with paper towel.
Serve immediately with marinara sauce.
