Mix soy sauce, water, garlic, honey, and cornstarch in a small bowl. Put aside. Set aside.
Cut the tenderloin in half lengthwise to make two pieces, then slice into thin pieces of approximately ¼ inch thick.
Heat a large skillet over medium-high heat. Put oil to lightly coat the pan. Cook pork pieces, stirring, until they are almost done, about 4 minutes.
Add frozen vegetables to the pan and cook over medium-high heat until they have thawed and are no longer frozen.
Turn up the heat to high. Add the stir-fry sauce to the pan and cook over high heat, stirring constantly, until the mixture starts to boil.
Reduce the heat to a low setting and cook for one to two minutes. Afterwards, remove from heat. The sauce will thicken and cover the stir fry as it cools.
Serve over rice, cauliflower rice or noodles of your choice.
