Easy Pasta e Fagioli Soup

It doesn't matter if you call it Pasta e Fagioli or Pasta Fagioli. This easy soup recipe is delicious and hearty, packed with authentic Italian flavors and ready in just 30 minutes.

Ingredients

  • 1 pound ground lean ground beef/turkey/chicken
  • 2 cups wide egg noodles, cooked to al dente
  • 2 tablespoons olive oil, divided
  • 1 medium white onion, chopped
  • 1 cup carrots, diced (about 3)
  • 1 cup celery, diced (about 3)
  • 4 cloves garlic, minced
  • 1 ounce can tomato sauce
  • 1 ounce can diced tomatoes
  • 4 cups chicken broth
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon dried marjoram
  • 1 ounce can light red kidney beans, drained and rinsed
  • 1 ounce can great Northern beans, drained and rinsed
  • 2 tablespoons fresh lemon juice
  • Kosher salt & freshly ground pepper
  • Parmesan cheese & Parsley for garnish

  1. Step 1

    Heat one tablespoon of olive oil in a large pot over medium heat.

  2. Step 2

    Cook the meat while breaking it into small pieces. Drain and set it aside.

  3. Step 3

    Heat the remaining tablespoon of olive oil in the same pot, and then add onion, carrots, and celery to cook for about four minutes until they are soft. Add garlic and cook for one more minute.

    Add the tomato sauce, diced tomatoes (with juice), broth, Italian seasoning, marjoram, and cooked beef. Let it simmer on low heat for 15 minutes.

  5. Step 5

    Then add the drained and rinsed beans, cooked egg noodles, and lemon juice. Stir well to combine and cook for 5 more minutes. Season with salt and pepper.

  6. Step 6

    Serve the soup in bowls, topping them with Parmesan cheese and chopped parsley as desired.
