Preheat the oven to 400 degrees F (225 degrees C) Spray a rimmed baking sheet (18 inches by 13 inches in size) with non-stick cooking spray.
Place the potatoes in the center of the baking sheet in a mound. Drizzle the potatoes with olive oil, sprinkle them with salt, pepper, garlic powder, paprika, and onion powder. Toss them well to evenly coat them in oil and spices.
Spread the potatoes out in a single layer evenly on the sheet. Bake the potatoes in the center of the preheated oven for 15 minutes.
Then, remove them from the oven, toss, and continue baking until they are just tender, which will take about 15 more minutes.
Move the oven rack about 5 inches away from the broiler, and broil the potatoes for about 2-3 minutes until they are slightly browned.
Keep a close eye on them, as they can brown quickly.
Remove and toss, continue to broil until golden brown and crispy on the other side for a minute or two longer. Serve while still warm.
