Curry Chicken Salad with Apple and Celery

The Curry Chicken Salad has a smooth and flavorful sauce covering soft chicken pieces. It has apple, celery, raisins, and cashews in every bite.


  • 1 1/2 pounds boneless, skinless chicken breasts
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • Juice of 1/2 a lemon
  • 1 tablespoon honey
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon yellow curry powder
  • 1 tart apple, chopped
  • 2 celery stalks, diced
  • 3/4 cup cashews, salted and roasted
  • 1/2 cup raisins
  • 1/4 cup green onions, chopped

    Cut the chicken into small pieces, and chop the apple, celery, and green onion.
