Cornbread Casserole

A popular dish at any holiday gathering, but also great as a side dish for non-holiday gatherings.

Ingredients

  • 1 egg
  • ½ cup (115 g) sour cream
  • 3 tablespoons (42 g) unsalted butter, melted
  • ½ teaspoon kosher salt
  • 15 ounce (425 g) can sweet corn, drained
  • 15 ounce (425 g) can cream style corn
  • 8 ½ ounce (241 g) box Jiffy corn muffin mix

  1. Step 1

    Heat the oven to 350 degrees F (175 degrees C).

  2. Step 2

    In a big bowl, mix the egg, sour cream, butter, and salt together. Add the sweet corn and cream-style corn, and mix again. Next, add the corn muffin mix and stir.

  3. Step 3

    Pour the batter into an 8x8-inch baking pan and bake for 35 to 45 minutes, or until a toothpick comes out clean when inserted into the center of the casserole.
