Mix together the cranberries, apple cider vinegar, brown sugar, cloves, salt, cinnamon, orange peel, orange juice, vanilla, and ⅔ cup of water in a pot. Boil over high heat, then lower the heat. Simmer for about 10 minutes, stirring regularly, until the mixture thickens and the berries start to break down.

Serve it either hot, at room temperature, or cold. You can keep the leftovers in an airtight container in the fridge for up to 5 days.

If you want your cranberry sauce to be thicker, let it simmer until it gets to the consistency you like! Remember that it will keep thickening a little after you take it off the heat.
