Chopped Caprese Salad

Caprese can be served as both a salad or an appetizer, made with the same main ingredients: tomatoes, mozzarella cheese, and fresh basil. This Chopped Caprese Salad recipe is a crowd-pleaser. You can easily make more for larger gatherings or work events. Its versatility and deliciousness make it a great addition to many meals.

Ingredients

  • 10 ounces cherry tomatoes chopped in half
  • 8 ounces Mozzarella Ciliegine "cherry-sized" whole milk fresh mozzarella
  • ¼ cup chopped fresh basil
  • ½ cup balsamic vinegar
  • 2 tablespoons honey
  • kosher salt and freshly ground black pepper to taste

  1. Step 1

    Add the balsamic vinegar and honey to a small saucepan over high heat. Bring to a boil and then reduce to a simmer. Once it's reduced by approximately half and thickened to your liking (about 10-15 mins), remove from the heat. Be careful it doesn't get too thick, but a bit syrupy is good.

  2. Step 2

    Toss all ingredients. Drizzle with the reduction, adding a little at a time, tossing, tasting, and then adding more to your liking.

Optionally, add a tablespoon of olive oil for extra flavor, though it's not required. Enjoy Chopped Caprese salad within 24 hours of preparation but store in an airtight container in the fridge for up to 3 days. Before serving, drain any excess liquid.
