In a big bowl, mix the flour, sugar, baking powder, and salt. In another big bowl, mix the egg, milk, bananas, and vanilla. Combine the wet and dry ingredients until there are no lumps left.

Heat up a griddle or large skillet on medium heat, then spray it with cooking spray. Pour the batter onto the hot griddle by 1/4 cup at a time and sprinkle with blueberries. Flip the pancakes when bubbles appear on the surface and cook until the other side turns golden, for about 2-3 minutes. Repeat using the remaining batter.
