Season the steak with 1.5 teaspoons of salt.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the steak in small batches until browned, approximately 1-2 minutes per side, then transfer to a plate. Repeat the process with the remaining steak, adding more olive oil as necessary.
Finally, reduce the heat to medium and add butter to the same skillet. Once the butter melts, add the onion and mushrooms. Cook until the onion softens and the mushrooms start to brown, which takes around 5 minutes. Add the garlic and cook, stirring it until fragrant, for 1 minute more.
Stir in the flour and cook it, stirring, for 1 more minute. Slowly pour in the beef broth and stir until it's fully incorporated. Add the thyme, remaining half teaspoon salt and pepper, and let it simmer while stirring often until the mixture begins to thicken, approximately for 5 minutes. Combine Worcestershire sauce, sour cream, and Dijon mustard while stirring. Simmer the sauce gently until it becomes thick enough to coat the back of a wooden spoon. Put the meat back into the skillet and mix until fully coated.
Serve over your choice of pasta or mashed potatoes and sprinkle with parsley if desired.
