Baked Tomatoes with Mozzarella and Parmesan

A tasty and savory side dish can be ready in only 15 minutes and pairs well with any main course.


  • 2 large tomatoes
  • 3/4 cup fresh shredded parmesan cheese
  • 3/4 cup shredded mozzarella
  • 1/2 cup fresh basil, chopped
  • fresh ground pepper
  • extra virgin olive oil
  • kosher salt (to taste)

  1. Step 1

    Heat the oven to 450 degrees F (220 degrees C).

    Cut the tomatoes into slices about 1/3 to 1/2 inch thick.

    Put them in a baking dish in a single layer.

    Then, season the tomato slices with kosher salt and sprinkle some parmesan, mozzarella, basil, and pepper on the top. Finally, lightly drizzle with olive oil.

    Bake in the middle of the oven for 10 to 12 minutes, or until tomatoes are soft and the cheese is melted. Next, broil in the oven for 2 to 3 minutes to brown the cheese. Avoid overbaking, or the tomatoes will get too soft.

    Lastly, add fresh basil as a garnish and serve.

Sprinkle tomatoes with a little Italian Seasoning blend before adding the cheese for even more flavor.
