This is an easy recipe for pork tenderloin. It is baked in the oven and produces a tender and juicy interior, surrounded by a deliciously seasoned and nicely browned exterior. It is a foolproof and perfectly tasty recipe!

Preheat the oven to 450 degrees F (220 degrees C) and place a 12-inch cast iron pan inside. Wait for 15-20 minutes for the pan to heat up.

While waiting, mix paprika, cumin, coriander, chili powder, garlic powder, cayenne pepper, black pepper in a bowl and season with salt.

Rub the seasoning all over the pork tenderloins.

Once the oven is preheated, remove the pan from the oven and immediately add oil, swirling it around (remember that the pan is hot!). Use oven mitts or thick kitchen towels to handle the pan. Immediately place the pork tenderloins in the pan.

Return the pan to the oven and roast for 10 minutes. Remove from the oven and turn the tenderloins to the opposite side.

Insert an oven meat thermometer into the tenderloin (if available, otherwise remove the roast occasionally to check the temperature) and continue to roast until the pork reaches 145 degrees F (70 degrees C) in the thickest portion of each tenderloin, which should take about 8-14 minutes longer.

After removing the roast from the oven, transfer it to a carving board and cover it with foil. Let it rest for 5-10 minutes.

Next, place the pan on the stovetop over medium heat. Add garlic and sauté for about 20 seconds. Pour in the chicken broth and let it cook until the sauce is reduced by about half, which should take around 4-5 minutes.

Then, whisk in the cornstarch and chicken broth mixture and let it cook until it thickens, which should take about 1 minute. Finally, season with salt and pepper if needed.

Carve the tenderloin into 1/2-inch thick slices and serve it with the pan sauce.
