Ingredients

  • 1 ½ cups Greek yogurt (full-fat or low-fat)
  • 1 medium cucumber, grated and drained
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped (or mint)
  • Salt and pepper to taste

Directions

Step 1

Prepare the cucumber. Grate the cucumber using a box grater. Place it in a clean kitchen towel or cheesecloth, then squeeze out as much water as possible. This prevents the tzatziki from becoming too watery.

Step 2

Mix the base. In a medium bowl, combine the Greek yogurt, minced garlic, olive oil, and lemon juice. Stir until smooth.

Step 3

Add cucumber and herbs. Fold in the grated cucumber and chopped dill (or mint). Season with salt and pepper to taste.

Step 4

Chill (optional). For best flavor, cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.

Step 5

Serve. Garnish with a drizzle of olive oil and a few sprigs of dill. Serve with pita, grilled meats, or fresh veggies.

Recipe tips

Use full-fat Greek yogurt for a creamier, richer tzatziki. Let the tzatziki sit in the fridge for at least 30 minutes to develop deeper flavors. Make sure to squeeze out as much water as possible from the cucumber to avoid a watery dip. For a twist, try adding a bit of grated lemon zest for extra brightness.
